Between Kranj and Golnik is a pizzeria that can boast of more than 30 years of tradition! A simple, homely place where the pizzas speak for themselves!
From water polo player to restaurateur – after the end of his sports career, Erik Bukovac took over the family’s pizzeria and devoted himself to winemaking.
What are dregs?
To prepare the dough, they use several different high-quality Italian strong flours for a long rise, an extremely small amount of brewer’s yeast, yeast, salt and Gorenjska water. Yeast is a natural leavening agent – a simple mixture of flour and water that begins to ferment at a certain temperature and time frame. From two ingredients, they obtain a leavening agent that was used by our ancestors and completely replaces brewer’s or dry yeast. The prepared dough is then fermented for at least 48 hours at different temperatures.
The result of long fermentation is the broken down carbohydrates and sugars found in the flour.
With this method of preparation, they prevent the dough from rising again in your stomach and, as a result, you will not feel bloated after eating.
They also pay special attention to the fillings, which include San Marzano pelate, Fior di Latte mozzarella, pecorino…
In addition to the classics, here you will also find special, seasonal pizzas, locally colored pizzas. For us, the winner was definitely the VRATOVINA AND STRACCIATELLA pizza!
There is also an offer of local beers and other drinks.
