We visited the family restaurant of Slovenian basketball aces the Nikolić brothers.
For over 35 years, a family story has been created in Postojna, which is passed down from generation to generation – among others, Slovenian basketball national team players Aleksej and Mitja Nikolić grew up with this food.
Their vision is clear: comfort food between the Alps and the sea – dishes that are local, familiar, prepared with technical precision and presented in a modern way. Food that pleases is not complicated.
They are primarily known for their Neapolitan pizzas, and we tried their Postojna pizza – a clean, elegant combination of 24-month-old prosciutto and parmesan, with a little arugula and a drop of extra virgin olive oil.
But ČUK is not just pizza – and that is precisely one of their greatest specialties.
The evening began with a platter of Vipava meats from local suppliers, served for sharing, which beautifully demonstrates their attachment to the region and the raw material.
The main courses followed, where the cuisine showed its breadth: juicy ombolo with a delicate nutty note and a filet of river trout in a light pumpkin base with spinach – classic, clean and balanced.
Their new specialty – porchetta – also has a special place on the menu. Slowly prepared, aromatic with a crispy crust and clear proof that ČUK is not afraid to step outside the box!
Their innovative sweet ending deserves special praise!
